A light, luscious bean ideal for cooking in the Central Mexican style and yet neutral enough to fit into any cuisine. We've been looking far and wide for this bean and finally we found a gorgeous crop to offer you. Similar to a Flor de Mayo or Flor de Junio, the Rosa de Castilla holds its shape and then pretty much melts in your mouth. It's great with lots of vegetables in a stew or it's a natural with pork. Rosa de Castilla is a very easy bean to love.   THE RANCHO GORDO-XOXOC PROJECT These beans are the results of our two companies working together to help small farmers continue to grow their indigenous beans in Mexico, despite international trade policies that seem to discourage genetic diversity and local food traditions. These rare beans are grown using centuries-old methods and may contain small pebbles or other natural debris. Please clean them thoroughly before cooking! Product of Mexico.
