A beautiful dense, velvety bean with a gorgeous pot
liquor. Borlotti are in the Cranberry Bean family and they're believed to
have originated in Colombia and then bred in Italy to their exacting
standards.

| Cook with a simple mirepoix and olive oil and then use in any recipe calling for borlotti, lamon or even cranberry beans. One of my favorite ways to eat them is with some poached chicken, raw red onion and a good drizzle of Tuscan olive oil. |

Traditionally,
you'd enjoy them in a pasta e fagioli (pasta fazool) or a minestrone soup.
Their thin skin allows a luscious bean broth to develop so think in terms
of dishes that can benefit from a good sauce.
