Christmas Limas are an intriguing variation on the traditional Lima. In Italy, you'll find them as "Fagioli del Papa", or "Pope's beans". Also known stateside as "Chestnut Lima".

A true lima bean, originally from Peru (hence Lima), this gorgeous bean has all the "meat" of limas but with a chestnut flavor. They're big and bold and can stand up to a chile sauce or curry or simply be enjoyed with a drizzle of olive oil and a few grates of dry goat cheese. One of my most successful inventions was cooked Christmas Limas in a gorgonzola sauce. I still swoon a little when I think about this dish!

If you grew up thinking you hated limas, you owe it to yourself to give this one a try.

I din't think I would like these great big beautiful beans, thought they might be too starchy, but they turned out to be the best bean I've ever eaten. I plan on eating many more, so I hope Rancho Gordo will always have Christmas beans. They are so good and so beautiful we are going to have them at Christmas. They have such a distinctive flavor and you can't beat this bean in the looks department.

I would never have guessed that this would be my favorite bean! I cook with a bay leaf, then add a bit of salt, pepper and oregano when they have softened. I put them on sautéed greens with a bit of olive oil and cheese ... if there are any left after eating out of the pot! I also like the 101 cookbook recipe with celery and caraway but these do not need much.

I use these for a soup with lots of celery and caraway from a recipe on 101 cookbooks. They are delightful.

This is a fabulous bean. Very creamy yet firm. Holds up well for a lima bean. I cook these with some oyster mushrooms, spinach, and a splash of lemon.
