Midnight is a true black turtle bean with a rich, traditional black bean flavor and texture, unlike our Black Valentine, which is a wonderful black bean, but it's more in the kidney bean family.

Use in any recipe calling for black or turtle beans or just enjoy on their own. These are incredibly fresh so little, if any, soaking is required.

Suggested uses:
Chili, pot beans, salads, Brazilian fejoida, stews.

I cooked a black bean competition between the gourmet black beans I bought from my local gourmet grocery shop, and some black beans purchased from a grocery that caters to the local Hispanic community, and these Rancho Gordo black beans. I also did a sprout test, to see how fresh they are. The beans from the local gourmet faired the worst, with a lot of broken pieces, and a really poor sprout rate. The regular grocery bulk beans were better, with only a few broken pieces, and half of the beans sprouted. The Rancho Gordo quality was excellent, with no broken beans, and they all sprouted eagerly. When cooked, these Rancho Gprdo black beans tasted fantastic, with a good toothy texture too. By comparison, the others looked like mud, and the flavor was lacking. Life is too short to eat common beans. I just placed another order. Thank you

I have become so obsessed with these beans that I have taken to hoarding them as they inevitably are sold out before the new batch comes in. I didn't even like beans until I tasted Rancho Gordo beans. What a difference a day makes. Now I eat them all the time. LOVE LOVE LOVE these beans!!!!
