This is the bean that started the whole thing! I was eating a bowl of simply cooked Rio Zapes and I was just bowled over. The flavor was reminiscent of pintos but there was so much more going on. I could detect traces of coffee and chocolate and the velvety texture was like nothing else. I was sold on heirloom varieties after just one bite.

You can use Rio Zape as you would a pinto but they're pretty dense. The pot liquor is deep and dark and makes a fine sauce on its own. I think they're a perfect side dish but I've also had reports that they make a fine bean chili.

If you garden, the immature pods make excellent string beans.

These are my go-to chili bean. Yes, I am a Texan who puts beans in her chili. I usually can a bunch of them in the pressure canner so I always have some on hand for last-minute chili purposes, and while canning them doesn't create AS good a pot liquor as slow cooking, the liquid is still flavorful and makes the chili richer and more complex. They hold up really well to extra cooking after the canning.

I am totally in love with these beans! Our home is never without them. They are firm and so meaty and flavorful, they put other beans to shame! They are great in other dishes but I love them the most by themselves with little adornment.Yum!!

These beans have amazing texture and flavor that holds up to just about any treatment. As much as I hate to cover up the flavor, the texture is so good these are our go-to beans for homemade baked beans.

This is one of my top two RG beans. It has a denser texture than a pinto and, to me, a slight coffee flavor undertone. I cook them with a little bouillon cube, garlic and hickory powder.

These Rio Zapes are amazing. Our favorite bean. When we have only one bag left, we know it's time to place another order. [Note that's "one left," not "used the last one" - gotta keep a safe buffer there]. When cooked down in their liquid and refried with a little lard, they take on a wonderful cheesy flavor to which I like to add a squeeze of lime for a delicious counterpoint.
