Ayocote Amarillo Bean
A dense, starchy runner bean from Puebla and Cholula, tough enough enough to handle your favorite chile sauce, but mild enough to use in salads.

If you're looking for a creamy, gentle bean that will melt your heart, this isn't it! Ayocote Amarillo beans are macho and ready to be dressed in your vinaigrette or in a chile salsa.
It's rare to find them outside of Puebla and we're happy to be able to offer them to you, in a limited supply.

These items are the results of our two companies working together to help small farmers and producers continue to grow their indigenous products in Mexico, despite international trade policies that seem to discourage genetic diversity and local food traditions.
This product includes a 5% "tariff" that will be donated to No More Deaths, a humanitarian aid group that provides water and other assistance to migrants and refugees along the US border. Rancho Gordo will be matching this amount as well. For more information, see our blog post.
