Here's a shot of a beautiful, cool cenote (sinkhole with groundwater) in Cazuma', Yucatan. Outside it was hot but the water was cool and obviously refreshing. Jumping was fun and a little scary. The beer waiting for me when I climbed out was welcome.
If the heat has you down and you don't have a local sinkhole, try a bean salad. No need to cut corners with nasty canned beans. Not you! Try making them in a slow cooker (Crockpot) tonight and the beans will be perfect by dawn, without any soaking. Toss them with onions, garlic, cherry tomatoes, and whatever else looks good in your vegetable cripser drawer in the fridge. Good salad dressing and quinoa, farro or rice are always welcome. You can chill it and serve it on a lettuce leaf and suddenly summer is a little more tolerable.
If you don't have a slow cooker, don't forget the pressure cooker. No pressure cooker? Do I have to think of everything? Just cook them however you can!
I'm one of those people who has a pot on the back burner no matter the weather, but I do understand not everyone is quite the bean freak I am.
Now back to the memories of that cenote.....
