Bayo Gordo Bean
A mild bean from Mexico with a velvety texture and rich bean broth.
These unusual beans come from Serdán, a city in the beautiful state of Puebla, right in the shadow of a volcano. The indigenous name of Serdán is Chalchicomula. It was a major center during pre-conquest times, strategically situated near Veracruz. The earth there is particularly rich thanks to the Orizaba volcano, in the Sierra Madre Oriental mountain ranges.

Bayo beans are a mild variety and generally depend on sauces and seasonings. The Bayo Gordo is a little bigger than normal and while it would be great in a chile sauce or soup, it can stand on its own as a simple pot bean, especially if made with a lot of aromatics. In Mexico, you’d serve it simply as a side dish with rice, or with roasted chicken or carne asada with a good strong salsa.
