Do you want to know who my new hero is? Meet John Fink of The Whole Beast. This winter he's been making cassoulets for clients to heat up and take home and I have zero hesitation in saying they are terrific and an excellent value.
His twist is using primarily turkey and of course his beans are Rancho Gordo Christmas Limas and Snowcaps.
