Online friend and frequent customer Larry Gober makes Oklahoma a tastier place. He developed this recipe for his client Roxana, and we're all the more fortunate for his sharing it here. Red-quinoa Roxana's Quinoa Tabbouli 1 cup white or red quinoa, uncooked 1 cup chopped parsley 1 cup Santa Sweet tomatoes, quartered 1/2 cup diced english cucumber 1/4 cup chopped mint 3 scallions chopped 1 clove garlic minced 1/4 cup fresh lemon juice 1/4 cup good olive oil 1 tsp salt Cook quinoa in 1 1/2 cups simmering water, drain and cool. Mix everything in a bowl and toss well, chill.
