Inspiration hit and I ran. The plant Julio had given me was doing really well and I was hungry for fish. So I chopped up some leaves from the Hierba Santa with onions, garlic and anchovies, plus a little of their olive oil. I shoved this into a trout's cavity and then wrapped it up in more leaves and then topped the whole thing off with a splash of olive oil. It baked at 375F for 20 minutes and it was perfection.
I don't eat the skin but I did scrape it off the leaves and ate those with the fish. The cooked leaves have a completely different flavor than the raw ones. I would do this again in a heartbeat.
